Usher in Chinese New Year With A Twist

From Singapore-born French Pâtissier, Chef Pang of Antoinette, comes the start of something new for the whole family at the festive table this Chinese New Year.

The Queen’s Yu Sheng – his take on the classic raw fish salad, is a dessert with French elements. A large chocolate Golden Egg, symbolising birth and renewal, is nested on an array of auspicious sweets such as chocolate fish, ingots, and coins, 5-spiced almonds and cashews, mandarin orange butter cake, meringue kisses, and yam and sweet potato chips.

As you crack open the chocolate Golden Egg with a wooden hammer, out pours a variety of Asian fresh fruits – pineapple, Thai green mango, red dragon fruit and pomelo.

Finally, a mandarin orange, plum, and gula melaka dressing is poured over the mix and the ceremonial “prosperity toss” begins, to usher in a year of prosperity.

Chef Pang created this confectionery so that the whole family, even children, could join in the fun and participate in the symbolic ‘lo hei’ tradition.
